Beetroot Super Food Soup!


    
Here is my recipe for Beetroot Soup! It really tastes great despite the fact that most people think Beetroot is outdated and revolting. It is also full of fibre, lowers your blood pressure and regulates your bowels beautifully.

It is an easy addition to your pregnancy diet and as recipes go, is very easy to make! You can eat it hot or cold, I prefer it hot personally. It is great with a nice chunk of freshly baked bread and butter. Here goes...

500g beetroot, peeled, trimmed, washed and cut into cubes
3 tbsp olive oil
1 large onion sliced and diced
3 cloves of garlic
3 sticks of celery
500ml veg stock
150g feta cheese or two tbsp sour cream
salt & pepper to taste


Method:
Saute onions and crushed garlic in oil until soft
Add beetroot & celery and pinch of salt and stir for a couple of minutes
Add stock and 500ml of water
Boil for 15 minutes or until beetroot is soft, cool for 5 mins
Blend until smooth
Add feta or creme fraiche, season to taste and serve.
